Ingredients

2 racks of baby back ribs (approximately 3-4 lbs)
1/2 cup pure maple syrup
1/4 cup chipotle in adobo sauce
2 tbsp apple cider vinegar
2 tbsp olive oil
3 cloves garlic, minced
2 tsp smoked paprika
1 tsp ground cumin
1 tsp onion powder
Salt to taste
Black pepper to taste
Fresh cilantro for garnish

Instructions

1. Preheat your grill to medium heat (about 300°F).
2. In a bowl, mix together maple syrup, chipotle in adobo sauce, apple cider vinegar, olive oil, minced garlic, smoked paprika, ground cumin, onion powder, salt, and black pepper until well combined.
3. Remove the thin membrane from the back of the ribs for better seasoning penetration.
4. Pat the ribs dry with paper towels and season with salt and black pepper.
5. Place the ribs on the grill, meaty side up, and cook for 1.5-2 hours, basting with the maple chipotle sauce every 30 minutes.
6. Once cooked through and tender, remove the ribs from the grill and let them rest for 10 minutes.
7. Slice the ribs, garnish with fresh cilantro, and serve.

Storage

Store leftover ribs in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a 300°F oven covered with aluminum foil for about 15-20 minutes until heated through.
