Maple Bourbon Sweet Potato Pie

Ingredients

2 lbs sweet potatoes, peeled and cubed
1 unbaked 9-inch pie crust
1/2 cup maple syrup
1/4 cup bourbon
1/2 cup granulated sugar
2 large eggs
1/2 cup heavy cream
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1 tsp vanilla extract

Instructions

1. Preheat oven to 350°F.
2. Boil sweet potatoes in a large pot of water until tender, about 20 minutes. Drain and cool.
3. In a large bowl, mash sweet potatoes until smooth.
4. Stir in maple syrup, bourbon, sugar, eggs, heavy cream, cinnamon, nutmeg, salt, and vanilla extract.
5. Pour mixture into the pie crust.
6. Bake for 55-60 minutes or until the filling is set and slightly puffed.
7. Cool on a wire rack before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, warm slices in the oven at 300°F for 10-15 minutes or microwave for 30 seconds.
