Maple Bourbon Butter Cake

Ingredients

2 cups granulated sugar
1 cup unsalted butter, softened
4 large eggs
2 teaspoons vanilla extract
1/4 cup bourbon
1 cup buttermilk
2 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup pure maple syrup
1/4 cup bourbon (for glaze)
1/2 cup unsalted butter, melted (for glaze)
3/4 cup granulated sugar (for glaze)
1 teaspoon vanilla extract (for glaze)

Instructions

1. Preheat your oven to 325°F (165°C) and grease a 10-inch bundt pan.
2. In a large bowl, cream together the sugar and softened butter until light and fluffy.
3. Beat in the eggs one at a time, then stir in the vanilla extract and bourbon.
4. Combine the flour, baking powder, baking soda, and salt; add to the creamed mixture alternately with buttermilk, beginning and ending with the flour mixture.
5. Pour the batter into the prepared bundt pan.
6. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
7. While the cake is baking, prepare the glaze by combining melted butter, sugar, bourbon, maple syrup, and vanilla extract in a small saucepan over medium heat. Stir until sugar is dissolved.
8. Once the cake is done, remove it from the oven and immediately pour glaze over the cake while it is still in the pan, allowing it to soak in as it cools.
9. Let the cake cool completely in the pan before inverting onto a serving plate.

Storage

Store the cake in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.

Reheating

To reheat, place a slice in the microwave for 15-20 seconds or enjoy at room temperature.
