Mango Avocado Salad

Ingredients

2 ripe mangoes, peeled, pitted, and sliced
2 ripe avocados, peeled, pitted, and diced
1/2 red onion, thinly sliced
1/4 cup fresh cilantro, chopped
2 tbsp lime juice
2 tbsp olive oil
Salt and pepper to taste

Instructions

1. In a large bowl, combine sliced mangoes, diced avocados, and red onion.
2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper to create a simple dressing.
3. Pour the dressing over the mango and avocado mixture, and gently toss to combine.
4. Garnish with fresh cilantro before serving.

Storage

Store the salad in an airtight container in the fridge for up to 1 day. Avocado may brown slightly but will still be edible.

Reheating

Salad is best enjoyed fresh and is not suitable for reheating.
