Ingredients
2 large sweet potatoes
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 cup shredded cheddar cheese
4 slices bacon, cooked and crumbled
1/4 cup sliced green onions
1/2 cup sour cream or ranch dressing for serving
Instructions
1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Peel and cut sweet potatoes into 1/4-inch thick fries.
3. In a large bowl, toss the fries with olive oil, salt, and black pepper until evenly coated.
4. Spread the fries in a single layer on the prepared baking sheet.
5. Bake for 25-30 minutes, turning once halfway through, until fries are golden and crispy.
6. Remove from the oven and sprinkle shredded cheddar cheese over the hot fries.
7. Return to the oven for 3-5 minutes, or until the cheese is melted.
