Ingredients
4 lbs russet potatoes
1 cup sour cream
1/2 cup unsalted butter
1 cup shredded cheddar cheese
1/2 cup crumbled cooked bacon
1/4 cup chopped chives
1 tsp salt
1/2 tsp black pepper
Instructions
1. Peel and cube the potatoes.
2. Boil the potatoes in salted water for 15-20 minutes until tender.
3. Drain the potatoes and return them to the pot.
4. Add butter and sour cream to the potatoes. Mash until smooth and creamy.
5. Fold in cheddar cheese, bacon bits, chives, salt, and pepper.
6. Serve immediately, garnished with extra chives and bacon if desired.
