Ingredients

1 cup lentils
2 cups fresh spinach
2 carrots, chopped
1 can (14.5 oz) diced tomatoes
1 medium onion, chopped
2 cloves garlic, minced
1 tsp cumin
1 tsp coriander
4 cups vegetable broth
2 tbsp olive oil
Salt to taste
Pepper to taste

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and garlic, sauté until translucent.
3. Stir in cumin and coriander, cook for another minute.
4. Add chopped carrots and cook for 3-4 minutes.
5. Add lentils, diced tomatoes, and vegetable broth.
6. Bring to a boil, then reduce heat and simmer for 25-30 minutes or until lentils are tender.
7. Stir in fresh spinach and cook until wilted.
8. Season with salt and pepper to taste.
9. Serve hot.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stovetop over medium heat until warmed through, or microwave on high for 2-3 minutes.
