Lemon Parmesan Asparagus Delight

Ingredients
1 lb fresh asparagus
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 cup grated Parmesan cheese
1 lemon, zested and juiced
1 clove garlic, minced
Instructions
1. Preheat oven to 425°F (220°C).
2. Trim the woody ends off the asparagus and place on a baking sheet.
3. Drizzle olive oil over the asparagus and sprinkle with salt and pepper.
4. Toss to coat the asparagus evenly.
5. Spread the asparagus in a single layer on the baking sheet.
6. Roast in the preheated oven for 12 minutes.
7. Remove from oven and sprinkle Parmesan cheese, lemon zest, and minced garlic over the asparagus.
8. Return to oven for another 3 minutes until cheese is melted and golden.
9. Drizzle lemon juice over the asparagus before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F for 5-7 minutes, or until warmed through.
