Lemon Herb Mediterranean Chicken Salad

A refreshing and zesty chicken salad with Mediterranean flavors, perfect for a light lunch or dinner option.

Ingredients

2 lbs boneless skinless chicken breasts
1/4 cup olive oil
2 tbsp lemon juice
2 cloves garlic, minced
1 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
5 oz mixed salad greens
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, thinly sliced
1/4 cup Kalamata olives, pitted and halved
1/4 cup feta cheese, crumbled
2 tbsp fresh parsley, chopped
1 tbsp fresh mint, chopped

Instructions

1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and black pepper to make a marinade.
2. Add chicken breasts to the marinade, coating well. Cover and refrigerate for at least 30 minutes.
3. Preheat grill to medium-high heat. Grill chicken for 6-7 minutes on each side or until cooked through.
4. Let chicken rest for 5 minutes, then slice into strips.
5. In a large salad bowl, combine salad greens, cherry tomatoes, cucumber, red onion, olives, feta, parsley, and mint.
6. Add grilled chicken slices on top and drizzle with additional olive oil and lemon juice if desired.
7. Toss gently to mix and serve immediately.

Storage

Store leftover salad in an airtight container in the refrigerator for up to 2 days. Keep dressing separate if possible.

Reheating

Reheat chicken strips separately in a microwave or skillet until warm, then add to fresh salad.
