Lemon Herb Grilled Shrimp

Ingredients
1 lb large shrimp, peeled and deveined
1/4 cup olive oil
2 tbsp lemon juice
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped
1 tsp lemon zest
1/2 tsp salt
1/4 tsp black pepper
Wooden or metal skewers
Instructions
1. In a mixing bowl, combine olive oil, lemon juice, garlic, parsley, dill, lemon zest, salt, and pepper. Mix well.
2. Add shrimp to the bowl and toss to coat them evenly in the marinade. Cover and refrigerate for at least 30 minutes.
3. Preheat the grill to medium-high heat.
4. Thread the marinated shrimp onto skewers, arranging them evenly.
5. Grill shrimp for 2-3 minutes per side until they are opaque and cooked through.
6. Serve the grilled shrimp hot, garnished with additional lemon wedges if desired.
Storage
Store leftover grilled shrimp in an airtight container in the refrigerator for up to 2 days.
Reheating
Reheat shrimp gently in a skillet over medium heat until warmed through or enjoy them cold.
