Ingredients
4 boneless skinless chicken breasts
1/4 cup olive oil
2 tablespoons lemon juice
1 tablespoon lemon zest
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon paprika
1/4 cup fresh parsley, chopped
Instructions
1. In a small mixing bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, salt, pepper, oregano, thyme, and paprika.
2. Place chicken breasts in a large resealable plastic bag and pour marinade over the chicken. Seal the bag and turn to coat. Marinate in the refrigerator for at least 30 minutes, preferably 2 hours.
3. Preheat grill to medium-high heat.
4. Remove chicken from marinade and discard the marinade.
5. Grill chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
6. Remove the chicken from the grill and let it rest for 5 minutes. Garnish with fresh parsley before serving.
Storage
Store cooked chicken in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently in a microwave or in the oven at 300°F until heated through.
