Ingredients

1.5 lbs chicken breast
8 cups chicken broth
1 cup carrots, sliced
1 cup celery, diced
1 onion, chopped
3 cloves garlic, minced
1 lemon, juiced
2 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped
0.5 tsp thyme
Salt and pepper to taste
2 tbsp olive oil

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, sauté until translucent.
3. Add chicken breast and cook until lightly browned.
4. Pour in chicken broth and bring to a boil.
5. Reduce heat and add carrots, celery, lemon juice, parsley, dill, and thyme.
6. Simmer for 25-30 minutes or until vegetables are tender and chicken is cooked through.
7. Remove chicken, shred it, and return to the pot.
8. Season with salt and pepper to taste before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stove over medium heat until warmed through, or microwave on high for 3-4 minutes, stirring halfway.
