Lemon Herb Chicken Skewers
Grilled chicken skewers marinated in a zesty lemon and herb dressing, perfect for easy picnic dining.

Ingredients
1.5 lbs chicken breast, cubed
1/4 cup olive oil
1/4 cup lemon juice
2 tbsp fresh parsley, chopped
2 tbsp fresh basil, chopped
2 cloves garlic, minced
1 tsp lemon zest
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
Wooden or metal skewers
Instructions
1. In a bowl, whisk together olive oil, lemon juice, parsley, basil, garlic, lemon zest, salt, black pepper, oregano, and thyme to make the marinade.
2. Add chicken cubes to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 1 hour.
3. Preheat the grill to medium-high heat.
4. Thread marinated chicken onto skewers.
5. Grill skewers for 5-7 minutes on each side or until chicken is cooked through and has grill marks.
6. Serve immediately.
Storage
Store leftover skewers in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place skewers on a grill or in an oven preheated to 350°F until warmed through.
