Lemon Herb Chicken and Broccoli

Ingredients
2 lbs boneless chicken breasts
1 lb broccoli florets
1/4 cup olive oil
3 cloves garlic, minced
2 lemons, juiced and zested
1 tbsp fresh thyme
1 tbsp fresh rosemary
1 tsp salt
1/2 tsp black pepper
1/4 cup chicken broth
1/4 cup grated Parmesan cheese
Instructions
1. Preheat oven to 375°F (190°C).
2. In a large bowl, mix olive oil, garlic, lemon juice, lemon zest, thyme, rosemary, salt, and black pepper.
3. Add the chicken breasts to the mixture, ensuring they are well-coated. Marinate for at least 30 minutes.
4. Arrange the marinated chicken in a baking dish.
5. Add broccoli florets around the chicken.
6. Pour chicken broth over the broccoli to keep it moist while baking.
7. Sprinkle grated Parmesan cheese over the entire dish.
8. Bake in preheated oven for 30-35 minutes or until the chicken is cooked through and broccoli is tender.
9. Serve warm with additional lemon zest if desired.
Storage
Refrigerate leftovers in an airtight container for up to 3 days.
Reheating
Reheat in the oven at 350°F (175°C) for 10-15 minutes or until heated through.
