Ingredients
1 cup all-purpose flour
1/2 cup unsalted butter, softened
1/4 cup powdered sugar
2 large eggs
1 cup granulated sugar
1/2 teaspoon baking powder
2 tablespoons all-purpose flour
1/4 cup freshly squeezed lemon juice
1 tablespoon lemon zest
Powdered sugar for dusting
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9x9 inch baking dish.
2. In a medium bowl, mix 1 cup flour, softened butter, and 1/4 cup powdered sugar until a dough forms. Press into the bottom of the prepared dish.
3. Bake crust for 15 minutes or until lightly golden. Remove from oven and set aside.
4. In another bowl, beat eggs and granulated sugar until light and fluffy. Add baking powder, 2 tablespoons flour, lemon juice, and lemon zest. Mix well.
5. Pour lemon mixture over the baked crust and return to oven.
6. Bake for an additional 20-25 minutes until the filling is set and slightly golden.
7. Allow to cool completely, then dust with powdered sugar before cutting into squares.
Storage
Store lemon bars in an airtight container in the refrigerator for up to 5 days.
Reheating
To reheat, warm a slice in the microwave for 10-15 seconds or enjoy cold directly from the fridge.
