Lemon Blueberry Muffin Bliss

Ingredients

1 1/2 cups all-purpose flour
3/4 cup granulated sugar
2 tsp baking powder

1 large egg
1/2 cup milk
1 tsp vanilla extract
1 tbsp lemon zest
1 cup fresh blueberries
2 tbsp lemon juice
1/2 cup powdered sugar

Instructions

1. Preheat your oven to 375°F and line a muffin tin with paper liners.
2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
3. In another bowl, combine oil, egg, milk, vanilla extract, and lemon zest.
4. Stir the wet ingredients into the dry ingredients until just combined.
5. Gently fold in the blueberries.
6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
8. While the muffins cool, mix lemon juice and powdered sugar to create a glaze.
9. Drizzle the glaze over the cooled muffins before serving.
