Ingredients

1 9-inch pie crust
3 cups fresh blueberries
1 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon zest
2 tablespoons lemon juice
1/4 teaspoon salt
1 tablespoon butter, cut into small pieces
1 egg, beaten (for egg wash)
1 tablespoon coarse sugar for topping

Instructions

1. Preheat oven to 375°F (190°C).
2. In a large bowl, mix blueberries, sugar, cornstarch, lemon zest, lemon juice, and salt until blueberries are evenly coated.
3. Pour blueberry mixture into the pie crust and dot with butter pieces.
4. Roll out the top crust and place over the filling. Trim excess dough and crimp edges to seal. Cut slits in the top crust to allow steam to escape.
5. Brush the top crust with beaten egg and sprinkle with coarse sugar.
6. Bake in the preheated oven for 50-55 minutes, or until the crust is golden brown and the filling is bubbling.
7. Remove pie from oven and let cool for at least 2 hours before serving.

Storage

Store leftover pie in the refrigerator covered with plastic wrap for up to 4 days.

Reheating

To reheat, place slices on a baking sheet and warm in a 350°F (175°C) oven for 10 minutes.
