Lemon Basil Shrimp Scampi with Zucchini Noodles

Ingredients

1 lb shrimp, peeled and deveined
2 tbsp olive oil
3 cloves garlic, minced
1/2 cup fresh basil leaves, chopped
1 lemon, juiced and zested
1/4 tsp red pepper flakes
1/2 cup white wine
1/4 tsp salt
1/4 tsp black pepper
2 medium zucchinis, spiralized
1/4 cup grated Parmesan cheese
2 tbsp unsalted butter

Instructions

1. Heat olive oil in a large skillet over medium heat.
2. Add minced garlic and sauté until fragrant, about 1 minute.
3. Stir in the shrimp and cook until pink and opaque, about 2 minutes per side.
4. Remove shrimp from the skillet and set aside.
5. In the same skillet, add white wine, lemon juice, lemon zest, and red pepper flakes.
6. Bring to a simmer and let reduce for about 3 minutes.
7. Stir in butter and chopped basil leaves until butter is melted.
8. Add spiralized zucchini noodles and toss to coat in the sauce.
9. Return shrimp to the skillet and heat through.
10. Season with salt and pepper to taste.
11. Serve with grated Parmesan cheese.

Storage

Store leftovers in an airtight container in the refrigerator for up to 2 days.

Reheating

Reheat gently in a skillet over medium heat until warmed through, adding a splash of water if necessary to prevent drying out.
