Ingredients
2 lbs beef chuck, cubed
3 tbsp coconut oil
1 cup shallots, sliced
5 cloves garlic, minced
1 inch ginger, minced
5 green chilies, slit
1 tsp turmeric powder
2 tsp red chili powder
1 tsp black pepper
1 tsp garam masala
2 tsp coriander powder
2 tsp mustard seeds
1 cup coconut slices, thinly sliced
2 sprigs curry leaves
Salt to taste
Instructions
1. Heat a large pan over medium heat and add the coconut oil.
2. Add mustard seeds to the oil; when they begin to pop, add curry leaves.
3. Add the sliced shallots, garlic, and ginger. Sauté until the shallots are golden brown.
4. Add the cubed beef to the pan and stir well to coat with the oil and spices.
5. Add turmeric powder, red chili powder, black pepper, garam masala, and coriander powder. Stir to mix thoroughly.
6. Add the slit green chilies and coconut slices to the pan. Stir-fry until the beef is cooked through and tender, approximately 30 minutes, stirring occasionally.
7. Season with salt to taste. Serve hot.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a pan over medium heat until thoroughly heated, or microwave covered for 2-3 minutes.
