Kale and Mushroom Stir-Fry

Ingredients
1 tablespoon olive oil
2 cloves garlic, minced
1 small onion, sliced
8 ounces mushrooms, sliced
1 bunch kale, stems removed and leaves chopped
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon grated ginger
1/4 teaspoon red pepper flakes
Salt and pepper to taste
Sesame seeds for garnish
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add garlic and onion, sauté until onion is translucent, about 3 minutes.
3. Add mushrooms and cook until they start to brown, about 5 minutes.
4. Stir in the kale, soy sauce, sesame oil, ginger, and red pepper flakes.
5. Cook until the kale is wilted and tender, about 5-7 minutes.
6. Season with salt and pepper to taste.
7. Serve immediately, garnished with sesame seeds.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium heat until warmed through. Alternatively, microwave on high for 1-2 minutes.
