Ingredients
1.5 lbs boneless, skinless chicken breast
1 large pineapple, peeled and cut into chunks
1/4 cup soy sauce
1/4 cup olive oil
2 tbsp honey
2 cloves garlic, minced
1 tsp fresh ginger, grated
1/4 tsp black pepper
1 tsp sea salt
1 lime, cut into wedges for serving
Chopped fresh cilantro for garnish

Instructions
1. In a medium bowl, whisk together soy sauce, olive oil, honey, garlic, ginger, black pepper, and sea salt.
2. Cut chicken into 1-inch cubes and place in a large resealable plastic bag.
3. Pour the marinade over the chicken, seal the bag, and refrigerate for at least 2 hours, or overnight for best results.
4. Preheat grill to medium-high heat.
5. Thread chicken and pineapple chunks onto skewers, alternating each.
6. Grill skewers for 8-10 minutes per side, or until chicken is completely cooked through and has nice grill marks.
7. Serve with lime wedges and sprinkle with fresh cilantro.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F for about 10 minutes or until warmed through.
