Instant Pot Beef Stroganoff
A comforting classic made convenient with the Instant Pot, this beef stroganoff is creamy, hearty, and full of rich flavors. Perfect for a busy weeknight, it delivers slow-cooked flavor in a fraction of the time.

Ingredients
1 lb beef sirloin, thinly sliced
2 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
8 oz cremini mushrooms, sliced
1 cup beef broth
2 tbsp Worcestershire sauce
1 tsp Dijon mustard
1/2 cup sour cream
2 tbsp all-purpose flour
Salt and pepper to taste
12 oz egg noodles
Chopped parsley for garnish
Instructions
1. Set the Instant Pot to sauté mode and heat the olive oil.
2. Add the beef slices, season with salt and pepper, and brown on all sides. Remove the beef and set aside.
3. In the same pot, add onion and garlic, sauté until onions are translucent.
4. Add the mushrooms and cook until softened.
5. Return the beef to the pot, add beef broth, Worcestershire sauce, and Dijon mustard.
6. Lock the lid and set the Instant Pot to high pressure for 10 minutes.
7. Quick release the pressure and remove the lid.
8. Stir in the sour cream and flour to thicken the sauce.
9. Add the egg noodles, set the Instant Pot to sauté mode, and cook until noodles are tender.
10. Garnish with chopped parsley and serve hot.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stovetop or in the microwave until warmed through.
