Ice Cream Sandwiches

Ingredients

2 cups of vanilla ice cream
12 chocolate chip cookies
1/4 cup of rainbow sprinkles (optional)

Instructions

1. Let the ice cream sit at room temperature for 5 minutes to soften slightly.
2. Place a generous scoop of ice cream on the flat side of a cookie.
3. Top with another cookie, flat side down, pressing gently to spread the ice cream evenly to the edges.
4. Roll the sides in sprinkles if desired.
5. Repeat with remaining cookies and ice cream.
6. Wrap each sandwich individually with plastic wrap.
7. Freeze for at least 1 hour to let them set.

Storage

Store in the freezer wrapped individually in plastic wrap for up to 1 week.

Reheating

No reheating required; serve directly from the freezer.
