Huevos Rancheros Verde

Ingredients
1 tbsp olive oil
4 small corn tortillas
1 cup tomatillo salsa
4 large eggs
1 avocado, sliced
1/4 cup crumbled queso fresco
1/4 cup chopped fresh cilantro
Salt and pepper to taste
Instructions
1. Heat olive oil in a skillet over medium heat.
2. Lightly fry each corn tortilla for about 1 minute per side until crispy and golden, then set aside.
3. In the same skillet, pour in tomatillo salsa and bring it to a simmer.
4. Crack eggs into the simmering salsa, cover, and cook for 4-5 minutes until the whites are set but yolks remain runny.
5. Place a tortilla on each serving plate, then top with a cooked egg and a generous spoonful of salsa.
6. Garnish with avocado slices, queso fresco, and cilantro.
7. Season with salt and pepper and serve immediately.
Storage
Store any leftover salsa and tortillas separately in airtight containers in the refrigerator for up to 3 days.
Reheating
Reheat salsa in a skillet over low heat until warmed through. Lightly warm tortillas in a dry skillet or microwave.
