Ingredients

2 tbsp chili paste
4 cloves garlic, minced
1 tbsp ginger, grated
4 cups chicken broth
2 tbsp soy sauce
1 tbsp sesame oil
2 packs instant ramen noodles
2 soft-boiled eggs
1 cup spinach leaves
1/4 cup green onions, chopped
1 tbsp sesame seeds
1/2 tsp crushed red pepper flakes
Salt to taste

Instructions

1. In a large pot, heat sesame oil over medium heat. Add garlic and ginger, sauté until fragrant.
2. Stir in chili paste and cook for another minute.
3. Pour in chicken broth and soy sauce, bring to a boil.
4. Add ramen noodles and cook according to package instructions.
5. Once noodles are tender, reduce heat and add spinach, cooking until wilted.
6. Divide noodles and broth into bowls, topping each with a soft-boiled egg, green onions, sesame seeds, and crushed red pepper flakes.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a saucepan over medium heat until heated through. Add a bit of water if the broth is too thick.
