Ingredients

1 lb carrots, peeled and sliced into sticks
2 tbsp olive oil
2 tbsp honey
1 tbsp sriracha sauce
1 tsp garlic powder
1 tsp ginger powder
1 tbsp fresh lime juice
Salt to taste
Chopped cilantro for garnish

Instructions

1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. In a large bowl, combine olive oil, honey, sriracha, garlic powder, ginger powder, lime juice, and salt.
3. Add carrot sticks to the bowl and toss until they are evenly coated with the glaze.
4. Spread the carrots in a single layer on the prepared baking sheet.
5. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the carrots are tender and caramelized.
6. Remove from the oven and let cool slightly before serving, garnished with chopped cilantro.

Storage

Store glazed carrots in an airtight container in the refrigerator for up to 3 days.
