Honey Miso Grilled Chicken

Ingredients

4 boneless skinless chicken thighs
2 tbsp white miso paste
2 tbsp honey
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp sesame oil
2 cloves garlic, minced
1 tsp fresh ginger, grated
1/2 tsp black pepper
2 green onions, sliced for garnish

Instructions

1. In a mixing bowl, combine miso paste, honey, soy sauce, rice vinegar, sesame oil, garlic, ginger, and black pepper to create a marinade.
2. Place the chicken thighs in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 2 hours, or overnight for best flavor.
3. Preheat your grill to medium-high heat.
4. Remove the chicken from the marinade and place on the grill.
5. Cook the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
6. Remove from the grill and let rest for 5 minutes.
7. Garnish with sliced green onions before serving.

Storage

Store leftover chicken in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the microwave for 1-2 minutes or until heated through, or reheat in an oven preheated to 350°F for 10-15 minutes.
