Honey Ginger Peach Cobbler

Ingredients
8 ripe peaches, peeled and sliced
2 tbsp fresh ginger, grated
1/2 cup honey
1 tbsp lemon juice
1 tsp vanilla extract
1 cup all-purpose flour
1 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1/2 cup (1 stick) unsalted butter, melted
1 cup whole milk
1/4 tsp ground cinnamon
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a large bowl, combine peaches, grated ginger, honey, lemon juice, and vanilla extract. Mix well and set aside.
3. In another bowl, whisk together flour, sugar, baking powder, and salt.
4. Stir in melted butter and milk until just combined to form a batter.
5. Pour the batter into a greased 9x13-inch baking dish.
6. Spoon the peach mixture evenly over the batter.
7. Sprinkle ground cinnamon on top.
8. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the batter is set.
9. Allow to cool slightly before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F for 10-15 minutes, or until warmed through.
