Honey Citrus Glazed Carrots

Ingredients

1 lb carrots, peeled and sliced
2 tbsp honey
1 orange, zested and juiced
1 tbsp lemon juice
2 tbsp unsalted butter
1/4 tsp salt
1/4 tsp black pepper
1 tbsp fresh parsley, chopped

Instructions

1. Preheat a large skillet over medium heat.
2. Add butter to the skillet and allow it to melt.
3. Stir in the honey, orange zest, orange juice, and lemon juice, mixing well.
4. Add the sliced carrots to the skillet, stirring to coat them with the glaze.
5. Season with salt and black pepper.
6. Cover the skillet and let the carrots cook for about 15 minutes or until tender, stirring occasionally.
7. Once cooked, remove the lid and let the glaze thicken slightly for another 2-3 minutes.
8. Transfer to a serving dish and garnish with fresh chopped parsley.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.
