Ingredients

4 large eggs
1 cup whole milk
1 tbsp honey
2 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp salt
8 slices of brioche bread
1 cup sliced almonds
1/4 cup unsalted butter
Maple syrup for serving

Instructions

1. In a large bowl, whisk together the eggs, milk, honey, vanilla extract, cinnamon, and salt until well combined.
2. Spread the sliced almonds on a plate.
3. Dip each slice of brioche bread into the egg mixture, ensuring both sides are well coated.
4. Press the coated bread into the sliced almonds, pressing gently to adhere the almonds to the bread.
5. In a large skillet, melt the butter over medium heat.
6. Place the almond-crusted bread slices into the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy.
7. Serve immediately with warm maple syrup.
