Homestyle Potato Soup
A comforting and hearty homestyle potato soup that combines creamy potatoes with subtle herbs and rich flavors, perfect for a cozy meal on cold days.

Ingredients
3 lbs russet potatoes (peeled and diced)
1 medium yellow onion (chopped)
3 cloves garlic (minced)
4 cups chicken broth
2 cups whole milk
1 cup heavy cream
2 tbsp unsalted butter
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
1/4 cup fresh chives (chopped)
1/2 cup shredded cheddar cheese
4 slices bacon (cooked and crumbled)
Instructions
1. In a large pot, heat olive oil and butter over medium heat.
2. Add chopped onion and garlic, sauté until onion is translucent.
3. Stir in diced potatoes, chicken broth, salt, pepper, and thyme.
4. Bring mixture to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.
5. Using a potato masher, slightly mash the potatoes in the pot for a chunkier texture.
6. Stir in milk and heavy cream, continue to cook for 5 minutes on low heat.
7. Adjust seasoning with additional salt and pepper if needed.
8. Serve hot, garnished with chives, cheddar cheese, and bacon crumbles.
Storage
Store leftover soup in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stovetop over low heat, stirring occasionally until warm. Alternatively, microwave in a heatproof dish until heated through.
