Homestyle Gluten-Free Casserole

Ingredients
2 lbs chicken breasts, cubed
1 cup chopped carrots
1 cup chopped celery
1 cup frozen peas
1 cup chopped onion
2 cloves garlic, minced
1 cup gluten-free chicken broth
1 cup gluten-free cream of mushroom soup
1/2 cup shredded cheddar cheese
1/4 cup gluten-free breadcrumbs
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
Instructions
1. Preheat the oven to 375°F.
2. In a large skillet, heat olive oil over medium heat and sauté garlic and onions until translucent.
3. Add chicken cubes and cook until browned on all sides.
4. Stir in carrots, celery, and thyme, cooking for another 5 minutes.
5. Pour in the chicken broth and cream of mushroom soup, stirring to combine.
6. Add peas and season with salt and pepper, simmering for 5 minutes.
7. Transfer the mixture to a greased 9x13-inch baking dish.
8. Sprinkle with cheddar cheese and breadcrumbs.
9. Bake in the preheated oven for 30 minutes, or until golden brown and bubbly on top.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual servings in the microwave for 1-2 minutes or until hot, or bake in the oven at 350°F for 10-15 minutes.
