Ingredients
2 lbs boneless, skinless chicken breasts
1 cup diced carrots
1 cup peas
1 cup diced onions
2 cups cooked egg noodles
10 oz can cream of chicken soup
1 cup shredded cheddar cheese
1/2 cup milk
1/4 cup butter
1/2 cup breadcrumbs
1 tsp salt
1/2 tsp black pepper
1 tbsp chopped parsley
Instructions
1. Preheat your oven to 350°F (175°C).
2. In a large skillet, melt butter over medium heat and sauté diced onions until translucent.
3. Add diced carrots and peas, cook until tender, about 5 minutes.
4. Stir in cream of chicken soup and milk, mixing thoroughly.
5. Add cooked egg noodles and shredded chicken breasts to the mixture, stirring until well combined.
6. Season with salt, pepper, and parsley to taste.
7. Transfer the mixture to a greased 9x13 inch baking dish.
8. Sprinkle shredded cheddar cheese evenly over the top.
9. In a small bowl, combine breadcrumbs with a tablespoon of melted butter, then sprinkle over the cheese layer.
10. Bake in preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
11. Remove from oven and let cool slightly before serving.
Storage
Store the casserole in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F (175°C) for 15-20 minutes, or until heated through.
