Homestyle Chicken and Stuffing

Ingredients

2 lbs boneless, skinless chicken breasts
1 (10.5 oz) can condensed cream of chicken soup
1/2 cup sour cream
1/4 cup chicken broth
1 (6 oz) package stuffing mix
2 cups frozen mixed vegetables
1 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
1 cup shredded cheddar cheese

Instructions

1. Place the chicken breasts in the bottom of the slow cooker.
2. In a bowl, mix together the cream of chicken soup, sour cream, chicken broth, thyme, salt, and pepper. Pour over the chicken breasts.
3. Sprinkle the stuffing mix evenly over the top of the mixture.
4. Top with frozen mixed vegetables.
5. Cover and cook on low for 6-7 hours or until the chicken is fully cooked and tender.
6. In the last 15 minutes of cooking, sprinkle the cheddar cheese over the top and allow it to melt.
7. Serve hot and enjoy!

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the microwave for 2-3 minutes or until heated through. Alternatively, reheat in the oven at 350°F for about 10 minutes.
