Homemade Cream of Mushroom Soup

Ingredients

1/4 cup unsalted butter
1 small onion, finely chopped
2 cloves garlic, minced
1 lb fresh mushrooms, sliced
1/4 cup all-purpose flour
4 cups chicken broth
1 cup heavy cream
1/2 tsp dried thyme
Salt and black pepper to taste
1 tbsp fresh parsley, chopped

Instructions

1. Melt the butter in a large pot over medium heat.
2. Add the onion and garlic, sauté until translucent.
3. Stir in the mushrooms and cook until they are soft.
4. Sprinkle the flour over the mushroom mixture and stir to combine.
5. Gradually add the chicken broth, stirring constantly.
6. Bring the soup to a simmer and cook for 10 minutes.
7. Stir in the heavy cream and thyme, and heat through.
8. Season with salt and pepper to taste.
9. Sprinkle with fresh parsley before serving.

Storage

Store the soup in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently over low heat on the stovetop, stirring frequently.
