Heritage Vinaigrette

Ingredients
1/2 cup olive oil
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Instructions
1. In a medium bowl, whisk together the red wine vinegar, Dijon mustard, honey, minced garlic, salt, and pepper.
2. Gradually add the olive oil while continuing to whisk until the dressing is well emulsified.
3. Taste and adjust seasoning as desired.
Storage
Store in an airtight container in the refrigerator for up to one week. Shake well before each use.
