Heritage Tortellini Soup

Ingredients
1 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
1/2 tsp dried basil
1/2 tsp dried oregano
1/4 tsp red pepper flakes
8 oz cheese tortellini
2 cups fresh spinach
Salt and pepper to taste
1/4 cup grated Parmesan cheese
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and cook until translucent, about 5 minutes.
3. Stir in minced garlic and cook for an additional 1 minute.
4. Pour in chicken broth and diced tomatoes with their juice.
5. Add dried basil, oregano, and red pepper flakes, stirring to combine.
6. Bring the mixture to a gentle boil.
7. Add tortellini and cook for 7-9 minutes, or until tender.
8. Stir in fresh spinach and cook until wilted, about 2 minutes.
9. Season with salt and pepper to taste.
10. Serve hot with grated Parmesan cheese sprinkled on top.
Storage
Allow the soup to cool to room temperature and then store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat on the stovetop over medium heat until warmed through, stirring occasionally.
