Heritage Roasted Acorn Squash

Ingredients
2 medium acorn squashes
4 tbsp unsalted butter, melted
2 tbsp brown sugar
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Cut each acorn squash in half lengthwise and scoop out the seeds and fibrous strands.
3. Place the squash halves cut side up on the prepared baking sheet.
4. In a small bowl, mix the melted butter, brown sugar, cinnamon, nutmeg, salt, and black pepper until well combined.
5. Brush the mixture generously over the cut sides and cavities of the squash halves.
6. Roast in the preheated oven for 45-55 minutes, or until the squash is tender and caramelized at the edges.
7. Remove from the oven and let cool slightly before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes until warmed through.
