Ingredients
1 (5-pound) bone-in beef rib roast
2 tablespoons olive oil
4 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme, chopped
2 tablespoons kosher salt
1 tablespoon freshly ground black pepper
1 tablespoon Dijon mustard
1 teaspoon onion powder
Instructions
1. Preheat your oven to 450°F (232°C).
2. In a small bowl, combine minced garlic, rosemary, thyme, salt, pepper, olive oil, Dijon mustard, and onion powder to form a paste.
3. Rub the paste generously over the entire surface of the rib roast, ensuring even coverage.
4. Place the roast in a roasting pan with the rib side down and the fat side up.
5. Roast in the preheated oven for 20 minutes to develop a crust.
6. Reduce the oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches 125°F (51°C) for medium-rare, approximately 1.5 to 2 hours.
7. Remove the roast from the oven and let it rest for 20-30 minutes before slicing. This allows the juices to redistribute throughout the meat.
Storage
Store any leftover prime rib in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, wrap the leftovers in aluminum foil and place in a 300°F (149°C) oven until warmed through, about 20 minutes.
