Heritage Noodles is a timeless dish featuring wide rice noodles, a rich mix of savory and spicy flavors, and fresh herbs. Perfectly stir-fried and coated with a delightful sauce, this dish offers a comforting and satisfying meal experience.

Ingredients

8 oz wide rice noodles
2 tbsp vegetable oil
4 cloves garlic, minced
2 shallots, thinly sliced
1 cup chicken breast, sliced thinly
1 cup shrimp, peeled and deveined
2 cups broccoli florets
3 tbsp soy sauce
2 tbsp fish sauce
1 tbsp oyster sauce
1 tbsp chili paste
1 tbsp sugar
1/2 cup Thai basil leaves
1/4 cup cilantro, chopped
1 lime, cut into wedges

Instructions

1. Soak rice noodles in warm water for 30 minutes, then drain.
2. Heat oil in a wok over medium-high heat. Add garlic and shallots, stir-fry for 1 minute.
3. Add chicken and shrimp, stir-fry until chicken is cooked through and shrimp is pink, about 3-4 minutes.
4. Add broccoli, stir-fry for another 2 minutes.
5. In a bowl, mix soy sauce, fish sauce, oyster sauce, chili paste, and sugar. Stir well.
6. Add drained noodles to the wok, pour sauce over, and toss to combine evenly.
7. Stir in Thai basil and cilantro, cook for another 2 minutes.
8. Serve hot, garnished with lime wedges.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pan over medium heat until warmed through, adding a splash of water if needed to loosen.
