Heritage Macaroni Salad

Ingredients

1 lb elbow macaroni
1 cup mayonnaise
2 tbsp apple cider vinegar
1 tbsp Dijon mustard
1 tsp sugar
1/2 cup diced red onion
3/4 cup diced celery
1/2 cup diced red bell pepper
1/4 cup chopped fresh parsley
Salt and pepper to taste

Instructions

1. Cook the macaroni according to package instructions, drain, and rinse with cold water.
2. In a large mixing bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, and sugar until smooth.
3. Add the cooked macaroni, red onion, celery, red bell pepper, and parsley to the bowl.
4. Toss until all ingredients are well combined and the macaroni is evenly coated with the dressing.
5. Season with salt and pepper to taste.
6. Cover the salad and refrigerate for at least two hours before serving.

Storage

Store in an airtight container in the refrigerator for up to 4 days.

Reheating
