Ingredients

2 lbs boneless chicken breast, sliced thinly
1 tablespoon olive oil
2 tablespoons unsalted butter
1 large onion, diced
3 cloves garlic, minced
8 oz button mushrooms, sliced
1/4 cup all-purpose flour
2 cups chicken broth
1 cup sour cream
1 tablespoon Dijon mustard
Salt and pepper to taste
2 tablespoons fresh parsley, chopped

Instructions

1. Heat olive oil and butter in a large skillet over medium heat.
2. Add onions and garlic, sauté until onions are translucent.
3. Add mushrooms and cook until tender.
4. Stir in chicken and cook until slightly browned.
5. Sprinkle flour over the mixture, stirring well to incorporate.
6. Gradually add chicken broth, stirring constantly.
7. Bring to a simmer and cook until the sauce thickens.
8. Stir in sour cream and Dijon mustard.
9. Season with salt and pepper to taste.
10. Garnish with fresh parsley before serving.

Storage
