Ingredients

4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs
1 cup breadcrumbs
1/2 cup grated Parmesan
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 cups marinara sauce
8 ounces mozzarella cheese, sliced
1/4 cup fresh basil leaves, chopped
1/2 cup vegetable oil

Instructions

1. Preheat your oven to 400°F (200°C).
2. Pound the chicken breasts to an even thickness.
3. In a shallow bowl, mix flour, salt, pepper, and garlic powder.
4. Beat the eggs in a separate bowl.
5. Combine breadcrumbs and Parmesan in another dish.
6. Dredge each chicken breast in the flour mixture, dip in eggs, then coat with breadcrumb mixture.
7. Heat vegetable oil in a large skillet over medium-high heat.
8. Fry chicken breasts until golden brown, about 3-4 minutes per side.
9. Transfer fried chicken to a baking dish.
10. Spoon marinara sauce over each piece and top with mozzarella slices.
11. Bake in the preheated oven for 15-20 minutes until cheese is melted and bubbly.
12. Garnish with fresh basil before serving.

Storage

Store leftover Chicken Parmesan in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for about 10 minutes or until heated through.
