Heritage Bean Trio Salad

Ingredients

1 cup canned green beans, drained
1 cup canned wax beans, drained
1 cup canned kidney beans, drained and rinsed
1/2 cup red onion, thinly sliced
1/4 cup fresh parsley, chopped
1/3 cup apple cider vinegar
1/4 cup olive oil
2 tbsp granulated sugar
1 tsp salt
1/2 tsp black pepper

Instructions

1. In a large mixing bowl, combine the green beans, wax beans, and kidney beans.
2. Add the sliced red onion and chopped parsley to the bowl.
3. In a separate small bowl, whisk together the apple cider vinegar, olive oil, sugar, salt, and pepper until the sugar is dissolved.
4. Pour the vinaigrette over the bean mixture and toss to coat evenly.
5. Cover and refrigerate for at least 2 hours or overnight to allow flavors to meld.
6. Stir again before serving and adjust seasoning if necessary.

Storage

Store the salad in an airtight container in the refrigerator for up to 5 days.
