Ingredients
4 large russet potatoes
4 tbsp unsalted butter, melted
2 tbsp olive oil
2 tsp sea salt
1 tsp freshly ground black pepper
2 tbsp fresh rosemary, finely chopped
2 cloves garlic, minced
Instructions
1. Preheat your oven to 425°F (220°C).
2. Wash and peel the potatoes, then place each potato between two wooden spoons.
3. Carefully slice the potatoes thinly, about 1/8 inch apart, ensuring you do not cut all the way through.
4. In a small bowl, combine melted butter, olive oil, salt, pepper, rosemary, and garlic.
5. Place the sliced potatoes on a baking sheet and brush them with the butter mixture, ensuring it seeps into the slices.
6. Bake in the preheated oven for 55-60 minutes, basting with butter mixture every 20 minutes, until the edges are crispy and the centers are tender.
7. Remove from the oven and serve hot, garnished with extra rosemary if desired.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place the potatoes in an oven preheated to 350°F (175°C) for 10-15 minutes until heated through.
