Herbed Sausage and Sweet Potato Hash Brown Bake

A savory and slightly sweet twist on the classic sausage hash brown bake, featuring herbed sausage and roasted sweet potatoes for a comforting, crowd-pleasing dish.

Ingredients

1 lb herbed sausage
2 cups shredded hash browns
2 medium sweet potatoes, peeled and cubed
1 cup shredded sharp cheddar cheese
1/2 cup chopped bell peppers
1/4 cup chopped onions
4 large eggs
1/2 cup milk
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
2 tbsp olive oil
1 tbsp chopped fresh parsley

Instructions

1. Preheat oven to 375°F.
2. In a large skillet, cook the sausage over medium heat until browned. Remove from heat and set aside.
3. In the same skillet, add olive oil and sauté sweet potatoes until slightly tender, about 10 minutes.
4. In a large bowl, whisk together eggs, milk, salt, pepper, and paprika.
5. In a greased 9x13 inch baking dish, layer hash browns, cooked sausage, sautéed sweet potatoes, bell peppers, and onions.
6. Pour the egg mixture over the layered ingredients.
7. Sprinkle shredded cheddar cheese evenly over the top.
8. Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown.
9. Garnish with chopped fresh parsley before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat individual servings in the microwave for 1-2 minutes or until heated through.
