Herbed Lemon Chicken Skewers

Tender chunks of chicken marinated in a blend of fresh herbs, lemon juice, and olive oil, grilled to juicy perfection. Perfectly paired with a tangy tzatziki sauce, these skewers make for a refreshing and flavorful main course.

Ingredients

1.5 lbs boneless skinless chicken breasts
1/4 cup fresh lemon juice
2 tbsp olive oil
2 tbsp fresh chopped parsley
1 tbsp fresh chopped thyme
1 tbsp fresh chopped rosemary
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
Wooden or metal skewers

Instructions

1. Cut chicken breasts into 1-inch cubes.
2. In a bowl, mix lemon juice, olive oil, parsley, thyme, rosemary, garlic, salt, and pepper.
3. Add chicken to the marinade, cover, and refrigerate for at least 1 hour.
4. Preheat the grill to medium-high heat.
5. Thread marinated chicken onto skewers, leaving a little space between each piece.
6. Grill skewers for 6-8 minutes per side, or until fully cooked and slightly charred.
7. Serve hot with a side of tzatziki sauce.

Storage

Store any leftover chicken skewers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat skewers on a grill or in an oven preheated to 350°F for about 10 minutes, or until heated through.
