Ingredients
3 lbs russet potatoes
1/4 cup olive oil
1/2 cup unsweetened almond milk
4 cloves garlic, minced
2 tbsp fresh parsley, chopped
1 tbsp fresh thyme, chopped
1 tsp salt
1/2 tsp black pepper
Instructions
1. Peel and chop the potatoes into chunks.
2. In a large pot, bring water to a boil and add a pinch of salt.
3. Add the potatoes to the boiling water and cook for 15 minutes or until fork-tender.
4. Meanwhile, in a small saucepan, heat olive oil over medium heat and sauté minced garlic until golden and fragrant, about 2 minutes.
5. Drain the potatoes and return them to the pot.
6. Add the garlic-infused olive oil, almond milk, fresh herbs, salt, and pepper to the potatoes.
7. Mash the potatoes until smooth and creamy, adjusting seasoning to taste.
Storage
Store leftover mashed potatoes in an airtight container in the refrigerator for up to 3 days.

To reheat, place the mashed potatoes in a microwave-safe dish and cover. Heat on medium power in the microwave, stirring occasionally, until heated through. Alternatively, reheat on the stovetop over low heat, adding a splash of almond milk if needed.
