Herbed Garlic Butter Baked Potato

Ingredients
4 large russet potatoes
4 tbsp unsalted butter
2 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tsp salt
1/2 tsp black pepper
1/4 cup grated Parmesan cheese
1 tbsp olive oil
1 tbsp chopped chives (for garnish)
Instructions
1. Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil.
2. Scrub the potatoes under running water and pat them dry. Use a fork to pierce each potato a few times.
3. Rub each potato with olive oil and sprinkle with salt and pepper. Place them on the prepared baking sheet.
4. Bake the potatoes for 50-60 minutes, or until they are crisp on the outside and tender on the inside.
5. In the last 10 minutes of baking, melt the butter in a small saucepan over medium heat, add the minced garlic, rosemary, and thyme, cooking until fragrant.
6. Remove the potatoes from the oven and slice them open lengthwise.
7. Drizzle the garlic herb butter generously over each potato, sprinkle with Parmesan cheese, and return to the oven for an additional 5 minutes.
8. Serve hot, garnished with chopped chives.
Storage
Store leftover potatoes in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat the baked potatoes in a preheated oven at 350°F for 15 minutes or until heated through. Alternatively, microwave on high for 2-3 minutes.
