Ingredients
3 lbs corned beef brisket
10 cups water
2 bay leaves
1 tsp black peppercorns
1 tbsp dried thyme
1 tbsp dried rosemary
1 medium onion, sliced
4 cloves garlic, peeled
1 lb baby carrots
1.5 lbs potatoes, quartered
1 head of cabbage, cut into wedges
2 tbsp olive oil
2 medium onions, thinly sliced
Salt and pepper to taste
Fresh parsley for garnish
Instructions
1. Place corned beef brisket in a large pot and cover with water.
2. Add bay leaves, black peppercorns, thyme, rosemary, sliced onion, and garlic to the pot.
3. Bring to a boil, then reduce the heat and simmer for about 3 hours until the beef is tender.
4. Add carrots and potatoes to the pot and cook for another 20 minutes.
5. Add cabbage wedges to the pot and cook for an additional 10 minutes, until all vegetables are tender.
6. Meanwhile, heat olive oil in a pan over medium heat, add sliced onions, and caramelize until golden brown.
7. Remove corned beef and vegetables from the pot, slice the beef, and serve with caramelized onions on top.
8. Garnish with fresh parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a covered dish in the oven at 325°F for about 15-20 minutes until warmed through.
